Takamura R2 Santoku (universal knife),
Blade of stainless Japanese R2 (SG2) powder steel with two layers of stainless steel for the outside (Sanmai forged). This knife is completely hand-forged in Takamura's forge. Takamura is one of the better-known knife makers and a number of well-known top chefs cut with Takamura knives, such as John Emerson, Gordon Ramsay, Ren'e Redzepi, Mark Best, David Chang, Narisawa and Hiromi Yamada. Normally, R2 powder steel can be hardened to a hardness of 65-66 Rockwell, but Takamura has opted for a hardness of up to 63-64 Rockwell for this professional line. This also makes the knives easy to sharpen yourself.
Another aspect is that the Nakago (part of the knife that is in the handle) does not extend all the way to the bottom of the handle, so there is no noticeable transition there and this ensures a very smoothly finished handle.
A Santoku is suitable for all jobs. The knife is designed to cut fish, meat and vegetables and is a hybrid between a chef's knife and a nakiri (vegetable knife).
